Help me please....I'm in a rut....

A cooking rut that is. I'm so tired of eating the SAME THINGS over and over. I want something new. Do you ever get that way? My hubs is a pretty picky eater so that makes it more difficult to cook new things. However, lately I have been trying new things and he has actually been eating them and enjoying them. So I'm calling on my fellow bloggers for help. Now, I'm not a big cook so it can't be too difficult, not too many ingredients, Get my drift? So send me your favorite "easy" meal that you make and I'll try it out on my family and let you know how it turns out. I'm thanking you in advance for allowing me something else to cook instead of tacos...HA!!! Can't wait to see what I get. You all are the best!!

great question, what i would advise you to do is go to a website like epicourious.com and put in something you like to cook with like zucchini or eggplant. let them do all the work for you! it's amazing what you can find online, good luck!

Got a recipe for you:

BARBEQUE BEEF CUPS*
Rachel Ray magazine, Nov 2007

INGREDIENTS:
3/4 lb ground beef
1/2 cup barbeque sauce (Corky's if you can find it)
3/4 cup shredded 2% cheddar cheese
1 16.3 ounce can of refrigerated biscuits (I make mine using lowfat Bisquick according to the directions on the box)

DIRECTIONS:
Preheat oven to 400 degrees. In a skillet, brown the beef over medium heat; drain off excess fat. Remove from the heat and stir in the barbeque sauce. Grease 6 inch jumbo muffin pan and place a piece of biscuit dough in each cup, stretching dough up the sides. Divide the beef mixture among the biscuit cups, sprinkle with cheese and bake until golden, 10-12 minutes. (If using Bisquick, it takes a minute or two longer).

*Instead of using ground beef, you can cook a boneless skinless chicken breast and dice it.
*It literally only takes about 15 minutes to prep this whole meal and then I serve with a side salad.

Your girls are beautiful and oh so cute. When I clicked on your blog...I thought to myself that it would be fun to have 2 girls although my husband really wants a boy.
